Sweet Eve Strawberry Ricotta and Lemon Thyme Cheesecake is a light, fragrant, and beautifully refreshing dessert that combines creamy richness with bright citrus and delicate herbal notes. Perfect for spring and summer occasions, this cheesecake offers an elegant twist on a classic favourite, balancing indulgence with freshness in every bite.
The base is typically made from crushed biscuits blended with melted butter, pressed into a firm layer and chilled until set. This creates a buttery, slightly crunchy foundation that contrasts perfectly with the smooth filling above. It adds texture and structure while keeping the dessert simple and comforting.
The filling is where this cheesecake truly shines. Creamy ricotta cheese is blended with soft cream cheese to create a light, airy texture that feels less heavy than traditional baked cheesecakes. Fresh lemon zest and juice are added to bring a bright, zesty lift that cuts through the richness and enhances the overall freshness of the dessert.
Lemon thyme introduces a subtle herbal aroma that elevates the cheesecake with a unique, fragrant twist. Its gentle citrusy undertone complements both the lemon and strawberries, adding depth without overpowering the delicate balance of flavours. Sweet Eve strawberries are either folded into the mixture or layered on top, providing bursts of natural sweetness and vibrant colour.
Once set, this Sweet Eve Strawberry Ricotta and Lemon Thyme Cheesecake is topped with glossy strawberries, a light glaze, or fresh thyme leaves for decoration. The result is a stunning dessert that is as beautiful as it is delicious.
Sweet Eve Strawberry, Ricotta and Lemon Thyme Cheesecake is perfect for entertaining or special celebrations, offering a refreshing, creamy, and aromatic experience. Each slice delivers a harmonious blend of sweet fruit, tangy citrus, and soft herbal notes, making it a truly memorable and sophisticated dessert.
